Salmon with Peppered Balsamic Strawberries

Ingredients

4-oz salmon fillets

Fresh lemon zest

2 teaspoons

Sea salt

¼ teaspoon

Freshly ground black pepper

¼ teaspoon

Spinach

½ pound

 

Ingredients for Peppered Balsamic Strawberries

Small diced fresh strawberries

2 cups

Fresh basil chiffonade

2 tablespoons

Balsamic vinegar

1 tablespoon

Turbinado sugar

1 tablespoon

Coarsely ground black pepper

½ teaspoon

Direction

  1. Preheat a grill or broiler.
  2. Season the salmon fillets with lemon zest, salt and pepper.
  3. Grill or broil the salmon fillets 3 to 5 minutes on each side, until the fish is cooked through.
  4. In a medium bowl, mix the strawberries, basil, vinegar, sugar and pepper until well combined.
  5. Steam the spinach to your desired doneness about 3-5 minutes.
  6. Evenly divide the steamed spinach among four plates. Place each salmon fillet on greens and top with ½ cup of peppered balsamic strawberries.
